A few days ago I was looking in the fridge for a quick bite to eat for a late lunch. In the days before I did my first Whole30, I would have grabbed a hunk of cheese and an apple. After that Whole30, I never went back to dairy (except butter and ghee) because I found out it gave me abdominal pain and GI distress. I changed out the cheese for a handful of nuts and was living in the “Fifth Shade of Paleo”, as described by Robb Wolf on his blog. I thought eating Whole30 was challenging; but then I met Autoimmune Paleo. btw, Robb Wolf lists AIP Paleo as the “Second Shade of Paleo”, right after “The Militant Paleo”. But I digress. Eating AIP Paleo has upped the challenge. I’ve had to rethink the grab n go snack-meal.
So there I was with the refrigerator door wide open…looking. I grabbed a pear, an avocado and a package of prosciutto. I peeled, cored and sliced the pear and sliced the avocado. I decided to use the prosciutto as a wrap and rolled each slice around a couple of pieces of pear and avocado. BAM! The mix of salty prosciutto, sweet pear and buttery avocado was pure heaven. I confess, I ate it all…all 8 slices of prosciutto too.
Those flavors were on my mind when I was shopping this week. I bought more pears, avocado and prosciutto to have on hand for that emergency snack or lunch. After shopping, my husband was eating his usual sushi from Trader Joe’s. I’ve made my AIP Spring Rolls in the past to pair with his sushi lunch but those pears and avocados were begging to be wrapped in prosciutto. Suddenly, I had an aha! moment. I could roll it all up in Paleo Wraps. I also added some micro greens to give them a little crunch. Everything except the Paleo Wraps was purchased in the isles of Trader Joe’s.
Prosciutto and Pear Paleo Wraps
Serves 4 for lunch
- 4 Julian Bakery Paleo Wraps
- 1 large ripe avocado
- 1-4 ounce package Trader Joe’s prosciutto (8 slices)
- 2 ripe Bartlett pears, peeled, cored and thinly sliced
- 1- 1.75 ounce package Trader Joe’s Organic Micro Greens

Lay out the 4 paleo wraps on a cutting board. Halve the avocado, discard the seed mash the avocado with a fork. This can be done while the avocado is still inside the skin or you can do it in a bowl. Spread each paleo wrap with 1/4 of the avocado. Leave a 1 inch strip on the far side free of avocado. Place 2 slices of prosciutto across the near side of each wrap. Lay pear slices across the near side of each paleo wrap. Top the pears with the micro greens. Tightly roll each wrap. Dab a little water on the paleo wrap strip left avocado-free to help seal it. Place sealed side down on a platter or plate and slice in half diagonally.
