I needed to make a dessert and I didn’t want it to be too complicated. I also didn’t want anything too sweet. So I did what I usually do in these circumstances…I experimented. These were a hit and we gobbled them up before I thought to take a photo.

½ cup unsulfured, unsweetened dried cherries (from #traderjoes )
1 1/2 tsp vanilla
Place the ½ cup of walnut pieces in a food processor and process until finely chopped. Removed to a shallow bowl. Place remaining ingredients into food processor and process using on/off pulsing until a dough is formed. This will take a few minutes. Chill for 30 minutes then roll into bite sized truffles. Roll each truffle in the finely chopped walnuts, pressing the walnuts to stay. Makes approximately 10 truffles about 1 ½ inch diameter.
