If you don’t like coconut, you can roll them in chopped walnuts. It took less than 10 minutes to prepare the dough. I put it in the freezer to chill while I cleaned up and then rolled the dough into balls.
Cocoa-Nut Snowballs
1/3 cup walnut pieces
3 tbsp cocoa powder

1/2 cup shredded unsweetened coconut
Place all ingredients except coconut into food processor and process using on/off pulsing until dough is formed. Chill for 30 minutes then roll into bite sized balls. Roll each ball in the coconut and serve. Makes approx 10 snowballs about 1 1/2 inch diameter.
